Course content:
There are fourteen modules covering the following subjects:
1. Introduction to food safety 2. Microbiology 3. Food contamination and control (bacterial and non bacterial) 4. Food poisoning and food born illness. 5. Food hazards from purchasing to serving 6. Personal hygiene and training 7. Food spoilage and preservation 8. Design and construction of food premises and equipment 9. Integrated pest management 10 Cleaning and disinfection. 11 Hazard analysis critical control point (HACCP) 12 Supervisory management 13 Food safety legislation 14 Revision/examination technique.
The following videos or DVDs are used with course lecture:
1. Food Safety Strikes Back (general recap Foundation) 2. Food Hygiene the Movie 2 (temperature control) 3. The Food Aliens (food contamination) 4. Uninvited Guests (pest control) 5. Clean Sweep (cleaning and disinfection) 6. Critical Steps to Food Safety (for catering) 7. The Food Safety Regulations (legislation) 8. Spot the Hazard (revision)
Course Duration & Certification: 5 days ( 40 hours) International Certification (HABC)
